I was poking around today and found a job listing that could be a lot of fun, at least for a couple years.  

Shift Supervisor, Café Roi (Full Time/ Unaccompanied)

Responsibilities:

Oversees the production of stock and/or supply at the retail or base food operations. Ensures quality and service standards are met. Supervises and trains staff in food operations in initiating the preparation of menu items in accordance to recipe and production procedures. Maintain food safety (HACCP Guidelines) records while adhering to safety and sanitation policies. Implements procedures received from training, accountability and proper utilization of stock inventory, and equipment maintenance while adhering to U.S. Army and commercial regulatory guidelines. Implements major activities within the scope of corporate objectives and policies in order to accomplish assigned goals.

Operational:

•   Perform in a management capacity by understanding profit and loss principles. (This assignment is in a remote south pacific Island location with a large indigenous workforce.)

•   This assignment is governed by overseas U.S. Army Regulations and unique civilian operated contract.

•   Ensures preparation of menu production records and logs for all food items are completed on a daily basis.

•   Delegates work duties and perform work scheduling.

•   Provide support in VIP service for catered events, special functions and change of commands.

•   Ensures food quality and production level.

•   Provide support in VIP service for catered events, special functions and change of commands.

•   Responds to customer satisfaction surveys and uses suggestions and comments in a pro-active manner.

•   Performs other duties as assigned by Food Services Managers I, II, III, IV, and V

Safety and Security:

•   Insures Physical Security and inventory accountability of facility and its contents through conducting open and closing inventories.

•   Initiates procedures on the operations of cleaning and sanitizing all equipment and work area after each use in compliance with TB MED 530 guidelines.

•   Practices safe food handling techniques in accordance with HACCP guidelines.

•   Responsible for Annual Medical Clearance of Food Handlers or related medical clearances in compliance with all requirements to subordinates.

•   Promote food safety, sanitation and personal hygiene standards to staff and initiates the required guidelines.

•   Assist in food production, packaging, labeling, and storage of food or supply items; ensures First-In-First-Out (FIFO) of stock and supplies are within expiration date.

•   Must be physically capable and may be required to lift up to 60 pounds, prolonged standing, walking, bending, twisting, reaching up and reaching out.

•   Completes necessary safety and sanitation training requirements, and meets all the uniform, appearance and grooming standards.

Requirements:

•   Three years of managerial experience or in a similar food facility.

•   Computer literate and able to accomplish navigation skills to the current island’s system network to complete daily assigned tasks in Excel, Word Document, and Access.

•   Current US Passport and other picture identification documenting identity in compliance with OPSEC requirements.

•   Current SERVSAFE Certification

•   Must have all the certifications, skills, education, knowledge, licenses and traits as necessary to fulfill the required duties; possess food handling practices, knowledge of presentation skills and experience or training in preparing menu entrées of an international venue

•   AA Degree in Hotel / Restaurant Management, Culinary Arts or related field or 3 years experience as a supervisor

•   High School Diploma or equivalent General Equivalent Diploma (GED)

Applicant selected will be subject to a government security investigation/criminal background check and must meet eligibility requirements for access to classified information as required for the position offered.

You and authorized dependents, if any, traveling to Kwajalein are required to have a valid passport in your possession prior to departure. You are encouraged to ensure it remains valid for at least the length of your contract.

I remember trolling for jobs on Kwajalein back before I dropped out of engineering school, but at this point if I’m going to go to work for Bechtel, working in a bake shop or plating fancy stuff at an officer’s club sounds like more fun than fixing the rigging on radio towers or cleaning up radioactive waste at Hanford. I could live in the South Pacific for a while. And my menu would get published in the newspaper every week.
